IMG_0129.jpgValentine's Day always seems to sneak up on me and I find myself the day before crying on the inside as I scroll through Pinterest pages trying to find a brilliant, cute and easy idea. Fear not, procrastinators! Whether you have a honey to dote on for the day or very important plans to not put on pants and watch rom-coms in your bed, here is a 10 minute recipe that will put hearts in your eyes.


Raspberry Pistachio Toast with Vegan Mascarpone


  • Hearty rustic bread (I prefer a multigrain sourdough, but anything will do!)
  • 1 container plain vegan cream cheese spread
  • 1/4 C powdered sugar or coconut sugar
  • 1 tsp vanilla extract
  • Pistachios
  • Raspberries
  • Cocoa powder for sprinkling 


To make the mascarpone, combine about half of your tub of cream cheese with the powered sugar in a mixer and combine gently until the sugar is incorporated. Drizzle in the vanilla and mix until smooth. The result is creamy, sweet but not too sweet and you shouldn't feel ashamed when you lick the spoon. It's a strong contender for best dairy free creaminess that could totally pass for dairy that I've ever experienced.

The toast assembly is fairly self-explanatory: Spread a good heap of mascarpone on a toasted slice of your bread, sprinkle pistachios and raspberries and top with a garnish of cocoa powder. For a richer chocolate taste, you can melt semi-sweet chocolate and drizzle that on top of the toast and/or straight into your mouth.


Paired with a nice coffee, this is a meal meant for a cozy morning. Happy love day everyone!
